I just got back from a bike ride to the bank. It’s been just over a year since I sold my car. So, I wrote about the journey here.
I was at the bank because I needed a check to cover the closing costs of our house tomorrow! Fingers crossed that it goes smoothly. We had our final walk-through today and it was all good.
It’s been a while since I’ve posted some food pics, so here’s a couple worth sharing:

Roasted teriyaki eggplant, coconut rice, mango, scallions, stir fried veggies. This was a meal I can take almost zero credit for (except for the plating). Kelsee made this and it was great. She made the teriyaki glaze from scratch and it was delicious. Not pictured, I added some peas to my dish before eating for some PROTEINNN.

Spanish chickpeas and rice with parsley, tomatoes, lemon juice and artichoke hearts. This was a recipe I stumbled upon. Just like the eggplant dish, I can’t take credit. Kelsee made this as the recipe says (she subbed the oil with veggie broth to sauté at the start): Recipe
That’s all for now. Onto a week of scheduling technicians and moving everything we own into a new house in a new community!
